Garum BBQ Sauce

BBQ and fish sauce go hand in hand. From Thai BBQ sauce made with fish sauce to Kentucky Black BBQ sauce made with Worcestershire, this classic combo exists for a reason. Fish sauce adds a punch of umami to sticky-sweet or smoky BBQ sauce for grilled meats, fish, veggies, or breads. In Texas, BBQ joints go through Worcestershire by the gallon, applying a combination of vinegar and the anchovy-based fish sauce with a mop applied directly to the ribs. 

INGREDIENTS

  • 1.5 cup ketchup

  • 1 cup dark brown sugar

  • ½ cup apple cider vinegar

  • 8 cloves of garlic

  • 2 Tbsp whole mustard 

  • 2 Tbsp crushed hot pepper paste 

  • 1 Tbsp onion powder 

  • 1 Tbsp paprika 

  • 1.5 tsp Maine Garum Company green crab garum 

  • 1 tsp Kosher salt

INSTRUCTIONS

  1. Smash peel garlic cloves with a knife, add salt, then repeat the process until you have a garlic paste

  2. Add garlic paste and all your ingredients to a saucepan, bring to a simmer, and remove from heat 

  3. Use right away or store in the fridge for up to a week
